Best Southern Fried Chicken Batter Recipe
If you’re looking for a healthier twist on the classic Southern fried chicken, this recipe is a must-try! With a crunchy cornflake coating and a flavorful batter, it delivers all the taste without the deep frying. Here’s how to prepare this delicious dish.
Ingredients:
- Cooking spray
- 1 pound of uncooked boneless, skinless chicken breasts (four 4-oz pieces)
- 1/2 teaspoon table salt, divided, or to taste
- 1/4 teaspoon cayenne pepper, divided, or to taste
- 1/3 cup all-purpose flour
- 3 oz low-fat buttermilk
- 1/2 cup cornflake crumbs
Instructions:
- Preheat the Oven: Start by preheating your oven to 375ºF (190ºC). Lightly coat a 13- X 8- X 2-inch baking dish with cooking spray and set it aside.
- Season the Chicken: Season the chicken breasts with salt and cayenne pepper to your taste, then set them aside to absorb the flavors.
- Prepare the Coatings: In a medium-sized bowl, combine the flour, 1/4 teaspoon salt, and 1/8 teaspoon cayenne pepper. In separate shallow bowls, place the buttermilk and the cornflake crumbs.
- Dredge the Chicken: First, dredge each chicken piece in the flour mixture, ensuring an even coating on both sides. Next, dip the chicken into the buttermilk, turning it to coat both sides thoroughly. Lastly, dredge the chicken in the cornflake crumbs, again turning to coat both sides.
- Bake the Chicken: Place the coated chicken breasts in the prepared baking dish. Bake for 25 to 30 minutes, until the chicken is tender and no longer pink in the center. There’s no need to flip the chicken during baking, as the oven will cook it evenly.
This Southern-style fried chicken is not only crispy and flavorful but also lighter due to baking instead of frying. Enjoy this dish with your favorite sides like mashed potatoes or coleslaw for a complete Southern meal!
