  • 1/2 teaspoon table salt, divided, or to taste
  • 1/4 teaspoon cayenne pepper, divided, or to taste
  • 1/3 cup all-purpose flour
  • 3 oz low-fat buttermilk
  • 1/2 cup cornflake crumbs

Instructions:

  1. Preheat the Oven: Start by preheating your oven to 375ºF (190ºC). Lightly coat a 13- X 8- X 2-inch baking dish with cooking spray and set it aside.
  2. Season the Chicken: Season the chicken breasts with salt and cayenne pepper to your taste, then set them aside to absorb the flavors.
  3. Prepare the Coatings: In a medium-sized bowl, combine the flour, 1/4 teaspoon salt, and 1/8 teaspoon cayenne pepper. In separate shallow bowls, place the buttermilk and the cornflake crumbs.
