This delicious breakfast casserole combines the comforting flavors of biscuits, savory sausage gravy, and scrambled eggs for a hearty start to your day. It’s an easy and filling dish that’s perfect for a weekend breakfast or brunch gathering.

Ingredients:

  • 8-count tube of refrigerated biscuits
  • 1 lb. ground breakfast sausage
  • 2 packs of country gravy mix
  • 1 can of evaporated milk
  • 12 large eggs
  • Salt and pepper, to taste

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Cook the Sausage: In a skillet over medium heat, brown the ground sausage until fully cooked, breaking it into small crumbles. Drain any excess grease from the skillet.
  3. Prepare the Gravy: Lower the heat to medium and sprinkle the two packs of country gravy mix over the cooked sausage. Add 1 cup of evaporated milk and 1 cup of water to the skillet. Stir the mixture and cook until the gravy thickens.
  4. Prepare the Eggs: In a large bowl, whisk together the 12 eggs with 5 oz. of evaporated milk. Season with salt and pepper to your liking. Scramble the eggs in a skillet over medium heat, cooking them until they are just set.
  5. Assemble the Casserole: Grease a 9×13-inch baking dish. Begin layering by spreading ⅓ of the sausage and gravy mixture on the bottom of the dish. Add half of the scrambled eggs on top. Repeat with another layer of sausage gravy and eggs, and then finish with the remaining gravy mixture.
  6. Add the Biscuits: Arrange the biscuits on top of the casserole, evenly spaced.
  7. Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the biscuits are golden brown and fully cooked.
  8. Serve and Enjoy: Once baked, remove from the oven, allow it to cool slightly, and serve warm.
