Broccoli and Cheese Stuffed Chicken Breasts
Broccoli and Cheese Stuffed Chicken Breasts
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and freshly ground black pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 tablespoon olive oil
- 1 cup finely chopped broccoli florets
- 1 cup shredded mozzarella or cheddar cheese
- 1/2 cup softened cream cheese
- 1 tablespoon Dijon mustard (optional)
- Fresh parsley, finely chopped, for garnish
Instructions:
1. Prepare the Chicken:
- Preheat your oven to 375°F (190°C).
- On a cutting board, place each chicken breast and carefully cut a horizontal pocket into the thickest part using a sharp knife, ensuring you don’t cut all the way through.
- Season both sides of the chicken breasts with salt, pepper, garlic powder, and paprika.
2. Make the Filling:
- In a mixing bowl, combine the chopped broccoli, shredded cheese, cream cheese, and Dijon mustard (if using). Stir until the mixture is evenly combined.
3. Stuff the Chicken:
- Gently spoon the broccoli and cheese mixture into each chicken breast pocket. If needed, secure the edges with toothpicks to prevent the filling from spilling out during cooking.
4. Cook the Chicken:
- Heat the olive oil in a large, oven-safe skillet over medium-high heat.
- Place the stuffed chicken breasts in the skillet and sear for 3-4 minutes on each side, or until they achieve a golden-brown color.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked and the internal temperature reaches 165°F (74°C).
5. Serve:
- Carefully remove the toothpicks from the chicken breasts before serving.
- Garnish with freshly chopped parsley and serve alongside a crisp side salad or roasted vegetables.
