Broccoli Cheddar Soup Recipe

Ingredients:

  • 1 large head of broccoli, cut into florets
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper, to taste

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
  2. Incorporate the broccoli and broth into the pot, then bring to a boil. Lower the heat and let the mixture simmer for approximately 10 minutes, or until the broccoli is tender.
  3. Using an immersion blender or a standard blender, puree the soup until smooth.
  4. Stir in the heavy cream and shredded cheddar cheese, continuing to cook until the cheese is fully melted and the soup is creamy.
  5. Season with salt and pepper to taste.
  6. Serve the soup hot, optionally garnished with extra cheddar cheese.
