Broccoli, Rice, Cheese, and Chicken Casserole

Broccoli, Rice, Cheese, and Chicken Casserole

Ingredients:

  • 2 cups water
  • 2 cups uncooked rice
  • 1 – 10 ounce can of cream of chicken soup
  • 1 – 10 ounce can of cream of mushroom soup
  • 2 cups cooked chicken, shredded
  • ¼ cup butter
  • 1 cup milk
  • 1 small white onion, chopped
  • 16 ounces broccoli pieces
  • 2 cups Cheddar cheese, shredded

Instructions:

Step 1:

  1. Preheat your oven to 350°F (175°C).
  2. Cook the rice according to the package directions.

Step 2:

  1. In a 9×13 inch baking dish, combine the cooked rice and shredded chicken.
  2. Add in the cream of chicken soup, cream of mushroom soup, butter, broccoli, and chopped onion.
  3. Stir everything together, mixing in 1 cup of the shredded Cheddar cheese.

Step 3:

  1. Bake the casserole in the preheated oven for 30 to 35 minutes.
  2. During the last few minutes of baking, sprinkle the remaining 1 cup of shredded Cheddar cheese over the top. Allow the cheese to melt.

Step 4:

  1. Remove the casserole from the oven and let it sit for 5 minutes before serving.
  2. Serve hot with a dinner salad or breadsticks.
