Ingredients
For the Burritos

- 1 small onion, diced

- 1 cup black beans or pinto beans, rinsed and drained
- 1 cup shredded cheddar or Mexican cheese blend
- 1 packet taco seasoning (or homemade)
- 1 tbsp olive oil
- 6–8 large flour tortillas
For the Sauce
- 1 can (10 oz) red enchilada sauce or 1 cup tomato sauce + 1 tsp chili powder + ½ tsp cumin + ½ tsp paprika
- ½ cup sour cream
- ½ cup shredded cheese (optional for topping)
Instructions
1. Prepare the Filling
- Heat olive oil in a skillet over medium heat.
- Add diced onion and sauté until soft.
- Add ground beef and cook until browned.
- Stir in garlic and cook for 1 minute.
- Add taco seasoning and a splash of water; simmer 2 minutes.
- Mix in cooked rice, beans, and half the shredded cheese. Remove from heat.
2. Assemble the Burritos
- Warm tortillas so they’re flexible.
- Place filling down the center of each tortilla.
- Roll tightly, folding in the sides.
3. Make the Sauce
- Warm enchilada sauce in a small pot.
- Stir in sour cream until smooth and creamy.
4. Bake (Optional but recommended)
- Preheat oven to 180°C (350°F).
- Place burritos seam side down in a baking dish.
- Pour sauce over the top.
- Sprinkle extra cheese.
- Bake for 15–20 minutes, until hot and bubbly.
