Ingredients
- 10 cups (one 16 oz bag) mini pretzel twists
- 1 cup light brown sugar, lightly packed
- ½ cup (1 stick) unsalted butter, cubed
- ¼ cup light corn syrup
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- 1 bag Heath toffee bits
Instructions
- Prepare Your Oven and Roasting Pan: Preheat your oven to 200°F (93°C). Lightly grease a large roasting pan with cooking spray. A disposable pan works great for easy cleanup. Add the pretzels to the pan and set aside.
- Make the Toffee Mixture: In a medium saucepan, combine the brown sugar, cubed butter, and corn syrup. Bring the mixture to a boil over medium heat, stirring constantly. Continue boiling for 5 minutes. Once done, remove the saucepan from heat and quickly whisk in the vanilla extract and baking soda. The mixture will bubble vigorously—this reaction is normal.
- Coat the Pretzels: Pour the hot toffee mixture evenly over the pretzels in the roasting pan. Sprinkle half the bag of toffee bits over the pretzels. Toss the pretzels gently to ensure they are evenly coated.
- Bake and Stir: Place the roasting pan in the preheated oven and bake for 1 hour, stirring every 15 minutes. This step ensures the toffee evenly coats all the pretzels.
- Finish with Toffee Bits: After baking, transfer the pretzels to a wax paper-lined countertop. Immediately sprinkle the remaining toffee bits over the warm pretzels. Allow the mixture to cool and harden for about an hour.
- Break and Serve: Once the toffee has set, break the pretzel mixture into smaller clusters. Package them as gifts or store them in an airtight container for a delightful snack.
