Broccoli Cheddar Soup Recipe
Ingredients:
- 1 large head of broccoli, cut into florets
 - 1 small onion, finely diced
 - 2 cloves garlic, minced
 - 4 cups chicken or vegetable broth
 - 2 cups shredded cheddar cheese
 - 1 cup heavy cream
 - 2 tablespoons butter
 - Salt and pepper, to taste
 
Instructions:
- In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
 - Incorporate the broccoli and broth into the pot, then bring to a boil. Lower the heat and let the mixture simmer for approximately 10 minutes, or until the broccoli is tender.
 - Using an immersion blender or a standard blender, puree the soup until smooth.
 - Stir in the heavy cream and shredded cheddar cheese, continuing to cook until the cheese is fully melted and the soup is creamy.
 - Season with salt and pepper to taste.
 - Serve the soup hot, optionally garnished with extra cheddar cheese.
