Ingredients
- 1 tbsp vegetable oil
- 1 lb ground beef
- Salt and pepper to taste
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 small head of green cabbage, chopped
- 3-4 medium carrots, sliced
- 4 cups low-sodium beef broth
- 3 (8 oz) cans tomato sauce
- 1/2 cup white rice
- 1 bay leaf
- 3 tbsp light brown sugar
- 2 tbsp fresh parsley, chopped
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the ground beef, seasoning with salt and pepper. Cook, stirring occasionally, until the beef is browned.
- Add the diced onion and minced garlic to the pot and sauté until tender and fragrant, about 3-5 minutes.
- Stir in the chopped cabbage, sliced carrots, beef broth, tomato sauce, white rice, brown sugar, and bay leaf. Mix well to combine.
- Bring the soup to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the vegetables are tender and the rice is fully cooked.
- Remove the bay leaf and discard it. Stir in the chopped parsley just before serving for a fresh burst of flavor.
