Ingredients

  • 1 tbsp vegetable oil
  • 1 lb ground beef
  • Salt and pepper to taste
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 small head of green cabbage, chopped
  • 3-4 medium carrots, sliced
  • 4 cups low-sodium beef broth
  • 3 (8 oz) cans tomato sauce
  • 1/2 cup white rice
  • 1 bay leaf
  • 3 tbsp light brown sugar
  • 2 tbsp fresh parsley, chopped

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the ground beef, seasoning with salt and pepper. Cook, stirring occasionally, until the beef is browned.
  2. Add the diced onion and minced garlic to the pot and sauté until tender and fragrant, about 3-5 minutes.
  3. Stir in the chopped cabbage, sliced carrots, beef broth, tomato sauce, white rice, brown sugar, and bay leaf. Mix well to combine.
  4. Bring the soup to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the vegetables are tender and the rice is fully cooked.
  5. Remove the bay leaf and discard it. Stir in the chopped parsley just before serving for a fresh burst of flavor.
