- 1 lb. large shrimp, peeled and deveined

- 1 teaspoon Cajun seasoning (or Creole seasoning)
- 1/2 teaspoon dried oregano
- 2 tablespoons olive oil
- 6 oz andouille sausage or smoked sausage, thinly sliced
- 10 oz fettuccine pasta
- 1/2 yellow onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 4 teaspoons Cajun seasoning (or Creole seasoning)
- 1 teaspoon brown sugar
- 2–3 cloves garlic, chopped
- 1/2 cup crushed tomatoes
- 1 cup chicken broth (sodium-free)
- 1 cup heavy cream
- 2/3 cup grated Parmesan
- 1 tablespoon parsley, chopped (for garnish)
Instructions
Step 1: Prepare the Shrimp
- Season the shrimp with Cajun seasoning, dried oregano, salt, and black pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the shrimp and cook for about 1-2 minutes per side, until they turn pink.
- Remove from the pan and set aside.
Step 2: Cook the Sausage & Vegetables
- In the same skillet, add the remaining 1 tablespoon of olive oil.
- Add the sliced andouille sausage and cook for 2-3 minutes until browned.
- Stir in the onion and red bell pepper and sauté for about 3-4 minutes until softened.
- Add the garlic, Cajun seasoning, and brown sugar and cook for another 30 seconds.
Step 3: Make the Sauce
- Pour in the crushed tomatoes and chicken broth, stirring to deglaze the pan.
- Lower the heat and add the heavy cream, stirring until well combined.
- Simmer for 3-5 minutes, allowing the flavors to blend.
Step 4: Cook the Pasta
- While the sauce is simmering, cook the fettuccine pasta according to package instructions.
- Drain and set aside, reserving 1/4 cup of pasta water if needed for the sauce.
Step 5: Combine Everything
- Stir the grated Parmesan cheese into the sauce, allowing it to melt.
- Add the cooked shrimp back into the pan.
- Toss in the drained pasta, mixing everything together.
- If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
Step 6: Serve & Garnish
- Plate the pasta and garnish with chopped parsley.
- Serve immediately and enjoy!
