Ingredients

For the Casserole

  • 2 cups cooked chicken, shredded or diced
  • 2 cups cooked rice (white or brown)

  • 1 can (10.5 oz) cream of chicken soup

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Prepare broccoli (steam fresh for 3–4 minutes or thaw frozen and pat dry).
  3. In a large bowl, combine cooked chicken, cooked rice, broccoli, cheddar, and mozzarella.
  4. In a separate bowl, whisk together cream of chicken soup, milk, melted butter,
    garlic powder, onion powder, paprika, salt, and pepper.
  5. Pour the sauce over the chicken mixture and mix well.
  6. Mix crushed crackers with melted butter and sprinkle over the casserole (optional).
  7. Spread mixture into the baking dish and bake for 25–30 minutes,
    until bubbly and lightly golden.
  8. Let rest for 5 minutes before serving.
