Description
This casserole is creamy, cheesy, and hearty—everything you want in a comforting homemade bake.
The tender chicken, perfectly cooked rice, and crisp-tender broccoli come together under a blanket
of melted cheddar. Each bite is rich, satisfying, and full of flavor, with the optional crunchy
topping adding an extra layer of texture.
Tips
- Use rotisserie chicken for convenience and extra flavor.
- Swap cheeses like Gouda, Colby Jack, or Monterey Jack for variety.
- Add a pinch of chili flakes or cayenne for heat.
- Use brown rice and reduced-fat cheese for a lighter version.
- Add 2 oz of cream cheese for extra creaminess.
- Mix in peas, carrots, or mushrooms for more veggies.
- Freeze before baking for up to 3 months; add 15 minutes to the bake time from frozen.
Correction
- If the casserole seems dry, add ¼ cup more milk or broth before baking.
- If too runny, bake uncovered an extra 5–10 minutes.
- Ensure rice is fully cooked before adding, as it won’t soften during baking.

Serve warm and enjoy this cheesy, comforting family favorite! Perfect for weeknights
or anytime you want a cozy, delicious meal.
