Ingredients
- 1 lb (450 g) ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup long-grain white rice (uncooked)
- 2 cups beef broth
- 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup frozen mixed vegetables (optional)
- 2 cups shredded cheddar cheese (divided)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp onion powder
- ½ tsp garlic powder
- 1 tbsp olive oil or butter
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with nonstick spray or butter.
- In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart. Drain excess grease.
- Stir in diced onion and minced garlic, and cook until softened, about 2–3 minutes.
- Add salt, pepper, paprika, onion powder, and garlic powder. Mix well.
- Stir in uncooked rice, beef broth, diced tomatoes, and cream of mushroom soup. Combine evenly.
- Transfer mixture to prepared baking dish and cover tightly with foil.
- Bake for 35–40 minutes, or until rice is tender and most of the liquid is absorbed.
- Remove foil, sprinkle 1½ cups of shredded cheddar cheese on top, and bake uncovered for 10 more minutes until melted and bubbly.
- Garnish with extra cheese or parsley if desired, then serve warm.
Description
This casserole is rich, creamy, and full of flavor. The seasoned beef, tender rice, and melted cheese blend
perfectly into a savory, comforting meal that’s both satisfying and easy to make. A true family favorite!
Tips
- Use long-grain white rice for best results; brown rice needs more broth and longer cooking.
- Add Worcestershire sauce or soy sauce for deeper flavor.
- Toss in bell peppers, corn, or spinach for extra nutrition and color.
- Prepare ahead and refrigerate; bake just before serving.
- Mix cheddar and mozzarella for a gooey, creamy cheese layer.
Correction
If your casserole is too dry, add ½ cup more broth or a splash of milk before baking next time.
If it’s too wet, bake uncovered for 10–15 minutes longer to evaporate excess liquid.
Enjoy your Cheesy Ground Beef and Rice Casserole warm, fresh from the oven — a perfect, cheesy comfort meal for any night!
