Cheesy Loaded Meatloaf Casserole
Ingredients:
- 3 cups leftover garlic mashed potatoes
- 1 pound lean ground beef
- 1/2 cup white onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 cup Italian breadcrumbs
- 1 large egg
- 1 1/2 cups sharp cheddar cheese, grated
- 1/3 cup bacon (cooked and crumbled) or bacon bits
- Kosher salt and freshly ground pepper, to taste
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Meat Mixture: In a large mixing bowl, combine ground beef, finely chopped onion, minced garlic, brown sugar, and Worcestershire sauce. Use two forks or your hands to mix thoroughly. Season with kosher salt and pepper.
- Incorporate Breadcrumbs and Egg: Add breadcrumbs and egg to the beef mixture and mix until well combined.
- Press Meat into Baking Dish: Transfer the mixture into an 8-inch square baking dish and press into an even layer.
- Add the Toppings: Spread mashed potatoes over the beef layer, then top with grated cheddar cheese and bacon bits.
- Bake the Casserole: Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Serve: Let the casserole cool slightly before serving. Enjoy!
