Cheesy Potato and Ground Beef Casserole

Ingredients:

  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 pound ground beef
  • 4 cups diced potatoes
  • 1 can (10.75 ounces) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Prepare Your Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set it aside.
  2. Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef until fully browned and crumbled. Drain any excess fat.
  3. Sauté Aromatics: Add the diced onions and minced garlic to the skillet with the cooked ground beef. Sauté until the onions are soft and translucent, approximately 5 minutes.
  4. Combine Ingredients: In a large mixing bowl, combine the ground beef mixture, diced potatoes, cheddar cheese, mozzarella cheese, condensed cream of mushroom soup, milk, paprika, salt, and pepper. Stir until all ingredients are thoroughly mixed.
  5. Assemble the Casserole: Pour the mixture into the prepared baking dish, spreading it evenly across the dish.
  6. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
  7. Finish Baking: Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese on top is melted and golden brown.
  8. Serve: Once baked, remove the casserole from the oven and allow it to cool slightly before serving. If desired, garnish with chopped fresh parsley. Serve hot.
