Instructions:

  1. Prepare the Mashed Potatoes: Ensure your mashed potatoes are smooth and well-seasoned. Leftover mashed potatoes work perfectly for this recipe, or you can make a fresh batch.
  2. Mix the Filling: In a large mixing bowl, combine the mashed potatoes, shredded cheese, Parmesan cheese, green onions or chives (if using), garlic powder, onion powder, salt, and pepper. Stir well until all ingredients are evenly incorporated, creating a flavorful, cheesy potato mixture.
  3. Form the Potato Balls: Scoop out small portions of the mixture and roll them into balls, roughly 1 to 1.5 inches in diameter. Continue forming balls until all the mixture is used.
