Cheesy Sausage and Potato Casserole

Ingredients:

  • 4 cups diced potatoes (peeled or unpeeled)
  • 1 lb (450g) sausage (Italian, breakfast sausage, or your preferred type)
  • 1 medium onion, diced
  • 1 bell pepper, diced (optional)
  • 2 cloves garlic, minced
  • 8 large eggs
  • 1 cup milk
  • 2 cups shredded cheese (cheddar, mozzarella, or a mix)
  • 1/2 cup cherry tomatoes, halved
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika (optional)
  • 1/2 tsp dried oregano (optional)
  • 1 tbsp butter (for greasing the baking dish)

Instructions:

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter to ensure easy release and a golden crust.
  2. Cook the Sausage: In a large skillet over medium heat, cook the sausage until it’s fully browned, breaking it into small, even pieces as it cooks. Once done, remove the sausage from the skillet and set it aside.
  3. Sauté the Vegetables: Using the same skillet, add the diced onion, bell pepper, and garlic. Sauté until the vegetables are tender and fragrant, approximately 5 minutes. For added flavor, you may also choose to sauté the cherry tomatoes at this stage. Once the vegetables are ready, reintroduce the cooked sausage into the skillet, combining it well with the vegetables.
  4. Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, salt, black pepper, smoked paprika, and dried oregano until well combined.
  5. Assemble the Casserole: Evenly spread the diced potatoes across the bottom of the prepared baking dish. Layer the sausage and vegetable mixture over the potatoes. Then, carefully pour the egg mixture over the entire dish, ensuring even coverage. Finish by sprinkling the shredded cheese on top.
  6. Bake: Transfer the casserole to the preheated oven and bake for 40-45 minutes, or until the eggs are fully set and the top is golden and bubbly.
  7. Serve: Allow the casserole to cool for about 5 minutes before slicing. Serve warm, and enjoy a hearty, comforting meal.

Notes:

  • Variations: The sausage can be replaced with bacon, ham, or a vegetarian alternative for different flavor profiles. Additionally, feel free to add other vegetables, such as spinach or mushrooms, to suit your preferences.
