Chewy Snickers Brownies
Ingredients
- 1/3 cup Dutch-processed cocoa powder
- 1 ½ teaspoons instant espresso powder
- 1/2 cup plus 2 tablespoons boiling water
- 2 ounces unsweetened chocolate, finely chopped
- 4 tablespoons (1/2 stick) unsalted butter, melted
- 1/2 cup plus 2 tablespoons vegetable oil
- 2 large eggs
- 2 large egg yolks
- 2 teaspoons vanilla extract
- 2 ½ cups granulated sugar
- 1 ¾ cups unbleached all-purpose flour
- 3/4 teaspoon table salt
- 16 “fun-size” Snickers bars, coarsely chopped
Instructions
- Prepare the Pan: Preheat your oven to 350°F (175°C). Grease the bottom and sides of a 9×13-inch metal baking pan with butter. Line the pan with a long piece of parchment paper, allowing the paper to extend up the sides and overhang slightly on both ends. Place another sheet of parchment paper perpendicular to the first, forming a cross. Grease the parchment paper with butter to make removing the brownies easier after baking.
- Make the Batter:
- In a large mixing bowl, whisk together the cocoa powder, espresso powder, and boiling water until the mixture is smooth.
- Add the finely chopped unsweetened chocolate and whisk until it melts completely.
- Stir in the melted butter and vegetable oil until combined.
- Add the eggs, egg yolks, and vanilla extract, whisking until the mixture is smooth and consistent.
- Whisk in the sugar until fully incorporated, then add the flour and salt. Use a rubber spatula to mix until just combined.
- Layer the Batter and Snickers:
- Spread half of the brownie batter evenly into the prepared pan, smoothing it into the corners.
- Sprinkle about 3/4 of the chopped Snickers over this layer of batter.
- Pour the remaining batter over the Snickers layer, spreading it evenly. Top with the remaining Snickers pieces.
- Bake: Place the pan in the preheated oven and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs attached.
- Cool and Serve: Transfer the pan to a wire rack and let the brownies cool for about 1 ½ hours. Using the parchment paper overhang, carefully lift the brownies from the pan. Place the brownies on the wire rack to cool completely, about 1 additional hour. Once cooled, cut into 2-inch squares and serve.
