This cherished recipe, passed down from my nana, remains one of my all-time favorites. Today, I’m excited to share a dish that marries the classic flavors of scampi with the ease of slow cooking: Chicken Scampi in a Slow Cooker. While its roots are Italian, this streamlined version of shrimp scampi has garnered a devoted following across the country. The slow cooker method not only enhances convenience but also allows the flavors to meld beautifully.

Chicken Scampi in a Slow Cooker Recipe (Serves 4)

Ingredients:

  • 4 skinless, boneless chicken breasts
  • 1/2 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1/8 teaspoon black pepper
  • 1/4 cup olive oil
  • 5 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1/2 cup chicken broth
  • 1/4 cup vinegar
  • 1 teaspoon Italian seasoning
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup finely grated Parmesan cheese

Instructions:

  1. In a large resealable plastic bag, combine flour, salt, and pepper. Add chicken breasts and shake to coat evenly.
  2. Heat olive oil in a pan over medium heat. Cook chicken breasts for a few minutes on each side until golden brown. Transfer chicken to the slow cooker.
  3. In the same pan, sauté minced garlic and bell peppers until softened. Transfer to the slow cooker, spreading over the chicken.
  4. In a bowl, mix together chicken broth, vinegar, and Italian seasoning. Pour this mixture over the chicken and peppers in the slow cooker.
  5. Cover and cook on low for 4-5 hours, or until the chicken is tender.
  6. Before serving, sprinkle with grated Parmesan and chopped parsley.

  • For extra heat, add a teaspoon of red pepper flakes to the Italian seasoning.
