Ingredients:

For the Patties:

  • Chickpeas: 1 cup, cooked (can use canned or dried chickpeas soaked overnight and boiled)
  • Egg Yolks: 3
  • Red Bell Pepper: 1/4 cup, finely chopped
  • Fresh Parsley: 1/4 cup, finely chopped
  • Olive Oil: For frying
  • Salt and Pepper: To taste

For the Yogurt Dip:

  • Greek Yogurt: 1 cup
  • Fresh Dill: 1 tablespoon, chopped
  • Garlic: 1 clove, minced
  • Lemon Juice: 2 teaspoons
  • Salt and Pepper: To taste

Instructions:

1. Prepare the Chickpeas:

If you’re using dried chickpeas, soak them overnight and then boil until tender. For canned chickpeas, simply rinse and drain them thoroughly.

2. Make the Patties:

In a mixing bowl, mash the cooked chickpeas until they reach a mostly smooth consistency.
Add the egg yolks, finely chopped red bell pepper, parsley, salt, and pepper. Mix until well combined.
Shape the mixture into small patties, ensuring they hold together well.

3. Cook the Patties:

Heat a skillet over medium heat and add a drizzle of olive oil.
Fry the patties for 3-4 minutes on each side, or until they develop a golden-brown, crispy exterior.

4. Prepare the Yogurt Dip:

In a small bowl, mix together the Greek yogurt, chopped dill, minced garlic, and lemon juice. Season with salt and pepper to taste. Stir until the dip is smooth and well combined.

5. Serve:

Serve the chickpea patties hot, paired with the tangy yogurt dip on the side for a delightful combination.
