Ingredients
- 1 pound ground beef
- 2 cups potatoes, peeled and sliced
- 2 cups celery, finely chopped
- ½ cup carrots, finely chopped
- ¼ cup green bell peppers, finely chopped
- ¼ cup onions, finely chopped
- 2 tablespoons butter or margarine
- 1 cup water
- 2 (10.75-ounce) cans condensed cream of mushroom soup (undiluted)
- 1 (5-ounce) can chow mein noodles
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C) and grease a 2-quart baking dish.
- In a skillet over medium heat, brown the ground beef. Drain the fat and set aside.
- In the same skillet, melt butter and sauté potatoes, celery, carrots, green bell peppers, and onions for 5 minutes, stirring occasionally.
- Add water, cover the skillet, and simmer for 10 minutes until the potatoes are slightly tender.
- In a large bowl, combine the cooked beef, undiluted mushroom soup, and sautéed vegetables with their liquid. Stir until well mixed.
- Place half of the chow mein noodles at the bottom of the baking dish. Spread the beef-vegetable mixture evenly over the noodles.
- Cover the dish with foil and bake for 20 minutes.
- Remove foil, sprinkle with shredded cheddar cheese and remaining chow mein noodles.
- Bake uncovered for an additional 10–12 minutes, or until the cheese is bubbly and the noodles are crisp and golden.
- Let sit for a few minutes before serving. Enjoy!
