Ingredients:
- 5 cups Honeycomb cereal
- ⅔ cup brown sugar
- ½ cup butter (1 stick)
- ⅓ cup corn syrup
- 1 teaspoon vanilla extract
- ¼ teaspoon baking soda
- ½ cup granulated sugar
- 1 ½ teaspoons cinnamon
Instructions:
- Prepare the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
- Prepare the Cereal Base: Place the Honeycomb cereal in a large mixing bowl and set aside.
- Cook the Caramel Mixture: In a medium saucepan, combine the brown sugar, butter, and corn syrup. Stir continuously over medium heat until the mixture begins to boil, then continue to cook for an additional minute.
- Add Vanilla and Baking Soda: Remove the saucepan from heat and add the vanilla extract and baking soda. Stir well; the mixture will bubble and expand.
- Coat the Cereal: Pour the caramel mixture over the cereal and toss gently to ensure an even coating.
- Add Cinnamon Sugar Topping: In a small bowl, sift together the granulated sugar and cinnamon. Sprinkle this mixture over the cereal and toss again until thoroughly coated.
- Bake the Snack Mix: Spread the coated cereal onto the prepared baking sheet. Bake for 8 minutes, stirring halfway through to ensure even toasting.
- Cool and Serve: Let the cereal cool completely on the baking sheet, then break it into bite-sized pieces. Store in an airtight container to keep fresh.
