    Stir the mixture over medium-high heat until the sugar dissolves completely.
  3. Heat to Hard Crack Stage: Attach a candy thermometer to the saucepan.
    Bring the mixture to a boil and heat it to 300°F (hard crack stage).
    This should take approximately 20 minutes. If the mixture rises too close to the pan’s edge,
    temporarily remove it from heat to avoid overflowing.
  4. Add Cinnamon: Once the mixture reaches 300°F, remove it from the heat.
    Carefully stir in the cinnamon oil (it’s highly concentrated, so handle with care).
    Quickly pour the mixture into the prepared pan and allow it to cool for at least 4 hours.
  5. Break and Dust: Once cooled, sprinkle powdered sugar over the top of the candy.
    Flip the candy onto a cutting board, peel off the parchment paper, and break it into bite-sized pieces using a knife.
    Dust the pieces with additional powdered sugar, if desired.
  6. Store: Store the cinnamon rock candy in an airtight container to maintain freshness and flavor.
