Coconut Chewies – A Sweet, Simple Treat

Introduction

Coconut Chewies are soft, chewy dessert bars filled with buttery richness and sweet coconut flavor.
They’re incredibly simple to prepare and require only a few pantry ingredients—perfect for bake sales,
potlucks, or a quick homemade treat. These bars have a golden top, a gooey center, and that irresistible
coconut aroma that fills the kitchen as they bake.

Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups light brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 ½ to 2 cups sweetened shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a large bowl, combine the melted butter and brown sugar. Stir until smooth. Add the eggs and vanilla extract; mix until fully combined.
  3. Add the flour, baking powder, and salt. Stir until just combined—do not overmix.
  4. Fold in the shredded coconut until evenly distributed.
  5. Pour the thick batter into the prepared pan and spread evenly. Bake for 22–28 minutes, or until the edges are golden and the center is set but still slightly soft.
  6. Allow the bars to cool completely before slicing into squares.

Description

Coconut Chewies are classic Southern-style dessert bars known for their dense, chewy texture—similar to a blondie
but infused with coconut. They’re moist, sweet, and slightly sticky in the best way, with an almost caramel-like flavor
from the brown sugar. The lightly toasted coconut adds a perfect touch of crispness that contrasts the soft interior.

Tips

  • Don’t overbake: Remove the bars when the center still looks slightly soft for the perfect chewy texture.
  • Use parchment paper: Makes slicing and lifting the bars much easier.
  • Add mix-ins: Try white chocolate chips, chopped pecans, or mini chocolate chips.
  • Boost coconut flavor: Add ½ teaspoon coconut extract.
  • For extra gooey bars: Reduce the flour to 1 ¾ cups.

Corrections

  • Too dry? Reduce bake time or ensure flour is measured correctly.
  • Too gooey? Bake for an additional 3–5 minutes or cool fully before slicing.
  • Not sweet enough? Use light brown sugar instead of dark.
  • Too oily? Try reducing butter to ¾ cup next time.

Enjoy

Slice into squares, dust with powdered sugar if desired, and enjoy these delightful, chewy coconut bars with a cup of tea,
coffee, or a scoop of vanilla ice cream. Simple, nostalgic, and absolutely delicious!
