Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 2 garlic cloves, freshly minced
  • 1 small onion, cut into wedges (use 2 wedges)
  • 4 cups herb-flavored stuffing mix
  • 4 tbsp butter
  • 1 can cream of chicken soup
  • 1 pint sour cream
  • 8 ounces broccoli florets (frozen but thawed)

Instructions

  1. In a large pan, combine the chicken broth, minced garlic, and onion wedges. Place the chicken breasts on top of this mixture. Bring it to a boil on high heat.
  2. Once the mixture reaches a boiling point, reduce the heat to medium-low, cover the pan, and let the chicken simmer for about 20 minutes, or until fully cooked.
  3. Remove the chicken from the broth and shred it into smaller pieces. Set the shredded chicken aside and save the broth for later use.
  4. In a separate bowl, melt the butter and pour it over the herb-flavored stuffing mix. Stir well to ensure the stuffing is evenly coated.
  5. In a large bowl, combine the sour cream with the reserved chicken broth using a hand mixer. Then, add the cream of chicken soup and mix until smooth.
  6. Spread the stuffing mix evenly across the bottom of a casserole dish. Next, layer the shredded chicken on top of the stuffing. Add the thawed broccoli florets as the third layer.
  7. Pour the soup and sour cream mixture over the top of the broccoli and chicken, ensuring it spreads evenly. For added texture, sprinkle a little of the stuffing mix on top.
  8. Preheat the oven to 350°F (175°C). Place the casserole in the oven and bake for 30 minutes, or until the top is golden and bubbly.
  9. Once baked, let the casserole cool for a few minutes before serving. Enjoy a hearty, comforting meal!
