Cornish Beef Pasties

Ingredients

Filling:

  • 1 pound beef (ground or shredded roast)
  • 1 pound Yukon Gold potatoes, diced
  • 2 medium carrots, peeled and diced
  • 1 small onion, diced
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic, minced
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried thyme
  • Salt and pepper to taste

Dough:

  • 3 cups all-purpose flour
  • 1 stick unsalted butter, chilled
  • 1 teaspoon salt
  • 2 egg yolks, divided
  • ½ cup cold water

How to Make Cornish Beef Pasties

  1. Prepare the Dough:
    • In a large mixing bowl, combine the flour and salt.
    • Add the chilled butter, cutting it into the flour mixture until it becomes crumbly.
    • In a separate small bowl, mix the cold water with one egg yolk, then pour this mixture into the flour blend.
    • Mix until it forms a dough. Wrap it in plastic wrap and refrigerate for about 30 minutes to chill.
  2. Make the Filling:
    • Brown the beef in a skillet over medium heat, seasoning it with salt and pepper to your taste.
    • In the same skillet, sauté the diced potatoes, carrots, and onion until they’re almost tender.
    • Add the garlic, rosemary, and thyme, stirring to combine with the beef. Remove from heat and set aside.
  3. Shape the Pasties:
    • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
    • Divide the chilled dough into six equal portions, rolling each one into a circle about 6-7 inches in diameter.
    • Moisten the edges of each circle with water, spoon some filling onto one side, then fold the dough over to form a half-moon shape. Press the edges firmly to seal, crimping with a fork if desired.
  4. Bake:
    • Place the pasties on the prepared baking sheet. Cut small slits on top of each for ventilation.
    • Brush each pasty with a wash made from the second egg yolk.
    • Bake for 35 to 40 minutes until golden brown and crispy.
  5. For Freezing (Optional):
    • To freeze, bake the pasties for 20 minutes, allow them to cool, and then freeze.
    • When ready to serve, bake for an additional 20 minutes after brushing with an egg wash.
