Cucumber Salad in a Jar
Here is a cucumber salad recipe that will stay fresh for 2 months!
Ingredients:
- 7 large dills, pickling cucumbers, unpeeled and sliced thin
- 1 1/2 cups sliced onions
- 1 1/2 cups sliced red peppers
- 1 tablespoon salt
- 1 cup white vinegar
- 2 cups sugar (or stevia)
- 1 teaspoon celery seed
- 1 teaspoon mustard seed
Instructions:
- In a large bowl, combine the sliced cucumbers, onions, peppers, and salt. Set aside.
- In a cooking pot, mix the vinegar, sugar, celery seed, and mustard seed. Bring the mixture to a boil.
- Remove the pot from heat and let the mixture cool for one hour.
- After cooling, pour the vinegar mixture over the cucumber mixture and mix well.
- Transfer the mixture into jars and store them in the refrigerator.
- The cucumber salad will keep fresh for up to 2 months.
Makes 2 quart jars. Enjoy!
