Crab and Shrimp Seafood Bisque

Crab and Shrimp Seafood Bisque
Ingredients
- 3 tablespoons butter
- 2 tablespoons chopped green onion
- 2 tablespoons chopped celery
- 3 tablespoons all-purpose flour
- 2 1/2 cups milk
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon tomato paste
- 1 cup heavy whipping cream
- 8 ounces crab meat
- 4 to 8 ounces small cooked shrimp or other seafood
- 2 tablespoons sherry wine
Preparation
- In a Dutch oven or large saucepan, melt the butter over medium-low heat. Add the chopped green onion and celery, and sauté until tender.
- Gradually blend in the flour until it forms a smooth mixture with the butter and vegetables. Continue cooking and stirring for about 2 minutes.
- In a separate saucepan, warm the milk over medium heat.
- Slowly add the warmed milk to the flour mixture, stirring continuously until the soup begins to thicken.
- Add the freshly ground black pepper, tomato paste, and heavy cream, stirring to combine.
- If desired, blend the soup in a blender or food processor until smooth, then return it to the saucepan.
- Stir in the crab meat, shrimp, and sherry wine. Bring the mixture to a simmer.
- Serve hot and enjoy this delectable seafood bisque.
