Crab Stuffed Cheddar Bay Biscuits with Zesty Lemon Butter

These Crab Stuffed Cheddar Bay Biscuits elevate the beloved classic Cheddar Bay flavor with a succulent crab filling and a bright, tangy lemon butter topping. They’re ideal as a sophisticated appetizer or a delicious side dish, especially for seafood lovers looking to impress.
Ingredients
Biscuits:
- 1 package Cheddar Bay Biscuit Mix
- 1 tsp garlic (minced or powder)
- 1 tsp Italian seasoning
Crab Filling:
- 1 pound lump crab meat
- ¼ tsp paprika
- ½ tsp onion powder
- ½ cup + extra mayonnaise (as needed)
- 1 tbsp mustard
- ½ sleeve Ritz crackers, crushed
- 1 cup grated Parmesan cheese
Lemon Butter Topping:
- Melted butter (as needed)
- 1 tsp lemon juice
Instructions
- Prepare the Cheddar Bay biscuit mix according to the package instructions, adding garlic and Italian seasoning for extra flavor. Set aside.
- Preheat the oven to 375°F (190°C). Lightly spray two muffin tins with nonstick spray.
- In a mixing bowl, combine lump crab meat, paprika, onion powder, mustard, mayonnaise, crushed Ritz crackers, and grated Parmesan. Stir thoroughly, adding a little more mayonnaise if the mixture needs more moisture.
- Dust your hands lightly with flour. Using a scoop or your hands, take a portion of biscuit dough and form it into a small cup or bowl shape.
- Spoon a generous amount of the crab filling into the biscuit dough cup.
- Cover the crab filling with more biscuit dough, carefully sealing the edges to encase the filling fully.
- Repeat until all dough and filling are used, placing each filled biscuit into the prepared muffin tin.
- Bake for 12 to 15 minutes, until golden brown and cooked through.
- Immediately after baking, brush each biscuit with melted butter mixed with lemon juice for a bright, zesty finish. Serve warm.
