Ingredients

  • 2–3 boneless skinless chicken breasts
  • 1 can (10.5 oz / 300g) cream of chicken soup
  • 1 can (10.5 oz / 300g) cream of mushroom soup (optional)
  • 1 can (10 oz / 283g) Rotel tomatoes (mild or spicy)
  • 1 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika (optional)
  • ½ tsp black pepper
  • ½ tsp salt (adjust to taste)

To Finish

  • 8 oz (225g) spaghetti, broken in half
  • 1 cup shredded cheddar cheese
  • ½ cup cream cheese or ½ cup heavy cream (optional)

Instructions

  1. Place chicken breasts in the crockpot. Add cream of chicken soup, cream of mushroom soup, Rotel tomatoes, chicken broth, garlic powder, onion powder, paprika, salt, and pepper.
  2. Cook on LOW for 6–7 hours or HIGH for 3–4 hours until the chicken is tender.
  3. Remove the chicken, shred it using two forks, and return it to the crockpot. Stir well.
  4. Break spaghetti noodles in half and stir them into the sauce. Ensure they are submerged.
  5. Cook on HIGH for 20–30 minutes, stirring occasionally, until the pasta is soft.
  6. Stir in the cheddar cheese and cream cheese (or heavy cream) until melted and creamy.
  7. Let the dish rest for 5 minutes to thicken, then serve warm.
