Crock Pot Pepper Steak Recipe

Crock Pot Pepper Steak

Introduction

Crock Pot Pepper Steak is a comforting, flavorful dish that’s perfect for busy weeknights or cozy weekends.
Tender strips of beef slowly cook with colorful bell peppers, onions, and a savory sauce that’s slightly sweet and garlicky.
Using a slow cooker makes this meal wonderfully easy — just set it and forget it! Serve it over rice or noodles for a satisfying, family-friendly dinner.

Ingredients

  • 2 lbs beef sirloin or round steak, sliced into thin strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced (optional for color)
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (undrained)
  • 1/3 cup soy sauce
  • 1/4 cup water or beef broth
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch (optional, for thickening)
  • 1 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp ground ginger (optional)
  • 2 tbsp vegetable oil (for browning the beef)

Instructions

  1. Prep the Beef: Slice the beef into thin strips. Season lightly with salt and pepper.
  2. Brown the Meat (Optional): Heat oil in a skillet over medium-high heat. Add beef strips and brown them lightly on both sides — this step adds flavor but can be skipped if you’re short on time.
  3. Assemble in the Crock Pot: Transfer the beef into your slow cooker. Add sliced peppers, onions, and garlic.
  4. Add the Sauce: In a bowl, mix together soy sauce, diced tomatoes, brown sugar, water or broth, and ginger. Pour this mixture over the beef and vegetables.
  5. Cook: Cover and cook on Low for 6-7 hours or High for 3-4 hours, until the beef is tender and the flavors are well combined.
  6. Thicken the Sauce (Optional): If you prefer a thicker sauce, mix cornstarch with 2 tbsp cold water and stir it into the crock pot during the last 20–30 minutes of cooking.
  7. Serve: Serve hot over steamed rice, noodles, or mashed potatoes. Garnish with sesame seeds or chopped green onions if desired.

Description

This Crock Pot Pepper Steak delivers a balance of savory, sweet, and slightly tangy flavors in every bite.
The slow cooking process ensures the beef becomes melt-in-your-mouth tender while the peppers retain just enough texture.
The sauce coats everything beautifully, creating a hearty dish that’s both homestyle and restaurant-quality.

Tips

  • Choose the right cut: Use sirloin, flank steak, or round steak for best texture.
  • Add more flavor: A splash of Worcestershire sauce or a dash of red pepper flakes can elevate the sauce.
  • For extra veggies: Add mushrooms, carrots, or snap peas in the last hour of cooking.
  • Storage: Keeps well in the fridge for up to 3 days and freezes beautifully for up to 2 months.
  • Pairing: Serve with white rice, fried rice, or lo mein noodles for a full meal.

Correction

If your sauce turns out too thin, thicken it with a cornstarch slurry near the end of cooking.
If it’s too salty, balance it out by adding a small amount of honey or extra diced tomatoes.

Enjoy!

Serve this Crock Pot Pepper Steak warm and enjoy the comforting combination of tender beef,
sweet peppers, and rich sauce that brings everyone to the table for seconds!
