Crockpot Garlic Parmesan Chicken Pasta Recipe

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 8 oz cream cheese, cubed
  • 12 oz penne pasta or any short pasta
  • ½ cup shredded mozzarella cheese
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Directions

  1. Prepare the Chicken: Place the chicken breasts in the crockpot. Season generously with garlic powder, onion powder, Italian seasoning, salt, and pepper.
  2. Add Broth and Cream: Pour the chicken broth and heavy cream over the chicken. Add the cubed cream cheese.
  3. Cook the Chicken: Cover the crockpot and cook:
    • On low for 4–6 hours
    • Or on high for 2–3 hours, until the chicken is tender.
  4. Shred the Chicken: Remove the chicken and shred it using two forks. Return the shredded chicken to the crockpot.
  5. Cook the Pasta: Stir the uncooked pasta into the crockpot, ensuring it’s well-coated in the sauce. Cover and cook on high for another 20–30 minutes, or until the pasta is tender. Stir occasionally.
  6. Finish with Cheese: Add the grated Parmesan and shredded mozzarella cheese. Stir until the cheeses melt and the sauce becomes creamy.
  7. Serve and Garnish: Garnish with freshly chopped parsley and serve warm.

Tips for Success

– Use pasta shapes that hold sauce well, like penne or rotini.

– For extra flavor, sear the chicken before placing it in the crockpot.

– Add red pepper flakes for a spicy kick!
