Cucumber Salad in a Jar

Here is a cucumber salad recipe that will stay fresh for 2 months!

Ingredients:

  • 7 large dills, pickling cucumbers, unpeeled and sliced thin
  • 1 1/2 cups sliced onions
  • 1 1/2 cups sliced red peppers
  • 1 tablespoon salt
  • 1 cup white vinegar
  • 2 cups sugar (or stevia)
  • 1 teaspoon celery seed
  • 1 teaspoon mustard seed

Instructions:

  1. In a large bowl, combine the sliced cucumbers, onions, peppers, and salt. Set aside.
  2. In a cooking pot, mix the vinegar, sugar, celery seed, and mustard seed. Bring the mixture to a boil.
  3. Remove the pot from heat and let the mixture cool for one hour.
  4. After cooling, pour the vinegar mixture over the cucumber mixture and mix well.
  5. Transfer the mixture into jars and store them in the refrigerator.
  6. The cucumber salad will keep fresh for up to 2 months.

Makes 2 quart jars. Enjoy!
