Divine Slow Cooker Caramelized Onion Pasta
Absolutely divine! I hadn’t tried this until recently, and the flavor combination is simply incredible.
This slow cooker pasta dish is the perfect comfort meal for busy weeknights. Rich, sweet caramelized onions form the base of a deeply flavorful sauce, while aromatic herbs and freshly grated Parmesan cheese round out each bite. It’s hearty, satisfying, and surprisingly easy to make with minimal hands-on time.
Ingredients:

Large yellow onions, thinly sliced | 4 |
Olive oil or unsalted butter | 3 tbsp |
Salt | 1 tsp |
Sugar (optional) | 1 tsp |
Garlic, minced | 4 cloves |
Dried thyme | ½ tsp |
Dried rosemary | ½ tsp |
Dry white wine or vegetable broth | ¼ cup |
Pasta (your favorite variety) | 1 lb (450g) |
Grated Parmesan cheese | ½ cup |
Fresh parsley, chopped | For garnish |
Salt and pepper | To taste |
Instructions:
- Thinly slice the onions and place them in a slow cooker. Add olive oil or butter, salt, and sugar (if using), then stir to coat.
- Cook on low for 8–10 hours, stirring occasionally, until the onions are deeply caramelized.
- About 30 minutes before finishing, stir in garlic, thyme, rosemary, and wine or broth. Continue cooking.
- Cook pasta according to package directions. Reserve 1 cup of pasta water before draining.
- Combine the caramelized onions with cooked pasta. Add reserved pasta water as needed to loosen the sauce.
- Stir in Parmesan cheese and season with salt and pepper to taste.
- Garnish with chopped parsley and serve hot.
Tip: This recipe works beautifully with fettuccine, linguine, or penne. For extra richness, stir in a splash of cream or a knob of butter before serving.
