Easiest No-Bake Cherry Cheesecake
Ingredients
For the crust:
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup sugar
For the filling:
- 16 oz (2 packages) cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
For the topping:
- 1 can (21 oz) cherry pie filling (or fresh cherries if preferred)
Instructions
1. Make the Crust
In a medium-sized bowl, combine graham cracker crumbs, melted butter, and sugar. Mix thoroughly until the texture resembles wet sand. Firmly press this mixture into the base of a 9-inch springform pan, using the back of a measuring cup to ensure even packing. Place the pan in the refrigerator while you prepare the filling.
2. Prepare the Filling
In a large bowl, beat the softened cream cheese using an electric mixer until smooth and creamy. Gradually add the powdered sugar and vanilla extract, continuing to mix until fully blended. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, ensuring it’s evenly incorporated.
3. Assemble
Pour the cream cheese filling over the chilled crust, spreading it evenly. Refrigerate for at least 4 hours or, for best results, leave it overnight to fully set.
4. Add the Topping
Just before serving, spread the cherry pie filling evenly over the top of the cheesecake.
5. Serve
Slice the cheesecake and enjoy your refreshing, no-bake dessert!
