Fluffy Potato Dinner Rolls

Ingredients:

  • 1/4 cup unsalted butter, melted
  • 2 tablespoons sugar
  • 1 cup mashed potatoes (about 2 medium potatoes)
  • 1/2 cup warm milk
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 large egg, beaten (for egg wash)

Preparation:

  1. Activate the Yeast:

    In a large mixing bowl, combine the warm milk, melted butter, sugar, and yeast. Let the mixture sit for 5-10 minutes until the yeast activates and becomes foamy.

  2. Incorporate the Potatoes:

    Add the mashed potatoes to the yeast mixture and mix thoroughly.

  3. Combine Flour and Salt:

    Gradually add the flour and salt to the mixture, stirring until a dough forms.

  4. Knead the Dough:

    Transfer the dough to a floured surface and knead for 5-7 minutes until smooth and elastic.

  5. First Rise:

    Place the dough in a greased bowl, cover with plastic wrap or a kitchen towel, and let it rise in a warm place for 1-2 hours, or until doubled in size.

  6. Shape the Rolls:

    Punch down the dough and divide it into equal-sized portions. Shape each portion into a ball and place them in a greased baking pan, leaving some space between each roll.

  7. Second Rise:

    Cover the rolls and let them rise for another 30-45 minutes, or until doubled in size.

  8. Preheat the Oven:

    Preheat your oven to 375°F (190°C).

  9. Brush with Egg Wash:

    Brush the tops of the rolls with the beaten egg.

  10. Bake:

    Bake in the preheated oven until the rolls are golden brown, approximately 20-25 minutes.

  11. Enjoy:
