Fried Green Tomatoes

Ingredients:

  • 4 large green tomatoes
  • 2 eggs
  • 1/2 cup milk
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/2 cup bread crumbs
  • 2 teaspoons coarse kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 quart vegetable oil for frying

Instructions:

  1. Prepare the Tomatoes:

    Slice the tomatoes into 1/2 inch thick slices, discarding the ends.

  2. Set Up Breading Station:

    In a medium bowl, whisk together the eggs and milk. Place the flour on a plate. On a separate plate, combine the cornmeal, bread crumbs, salt, and pepper.

  3. Bread the Tomatoes:

    Dip each tomato slice into the flour, coating it evenly. Next, dip the floured tomato into the egg and milk mixture. Finally, dredge the tomato in the breadcrumb mixture, ensuring it is fully coated.

  4. Fry the Tomatoes:

    In a large skillet, pour enough vegetable oil to create a 1/2 inch layer in the pan. Heat the oil over medium heat. Fry the tomato slices in batches of 4 or 5, ensuring they do not touch each other in the pan. Cook each side until golden brown, then remove and drain on paper towels.
