Fried Potatoes, Onions, and Smoked Polish Sausage Recipe

Fried Potatoes, Onions, and Smoked Polish Sausage Recipe

Ingredients:

  • 1½ pounds russet potatoes, diced into 1/2″ cubes
  • 1 pound smoked Polish sausage, sliced
  • 2 tablespoons olive oil
  • ½ teaspoon seasoned salt
  • ½ teaspoon Italian seasoning
  • ½ large red bell pepper, sliced
  • ½ large green bell pepper, sliced
  • 1 small onion, diced
  • Black pepper, to taste
  • Shredded Parmesan cheese, for garnish (optional)

Instructions:

  1. Sauté the Onion: In a large pan, melt a tablespoon of butter over medium heat. Add the diced onion and sauté until it becomes translucent and soft. Remove the onion from the pan and set aside.
  2. Cook the Potatoes: In the same skillet, add 1 tablespoon of butter and 1 tablespoon of olive oil. Once the butter is melted, add the diced potatoes, seasoned salt, Italian seasoning, and black pepper. Stir well to coat the potatoes evenly. Cover the skillet and cook for about 15 minutes, stirring occasionally, until the potatoes begin to soften.
  3. Add the Sausage: After the potatoes have softened, add the sliced smoked sausage to the skillet. Cook for an additional 10 minutes, allowing the sausage to brown slightly.
  4. Combine and Cook Vegetables: Add the sautéed onion, red bell pepper, and green bell pepper to the skillet. Continue to sauté until the peppers are tender yet slightly crisp.
  5. Garnish and Serve: If desired, sprinkle shredded Parmesan cheese over the dish before serving.
