Fried Rice: A Deliciously Better Alternative to Restaurant Takeout

Ingredients:

  • 3 large eggs, gently whisked
  • 1 large carrot, peeled and diced
  • 2 teaspoons sesame oil
  • 1 small white onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup frozen peas
  • 3 tablespoons butter, divided
  • 4 green onions, sliced thinly
  • 1/4 cup soy sauce (adjust to taste)
  • 3 teaspoons oyster sauce
  • 4-5 cups cold, cooked rice
  • Salt and pepper to taste

Preparation:

  1. Begin by heating a large pan or wok over medium heat. While both nonstick and regular pans work, a nonstick pan is recommended for this recipe. Add one tablespoon of butter to the pan, allowing it to melt. Once the butter has melted, pour in the lightly beaten eggs. Let the eggs cook for approximately 30-40 seconds, or until they are set. Stir them gently, then remove the eggs from the pan and set them aside.
  2. In the same pan, add the remaining butter. Once the butter is hot, add the diced carrot and onion. Sauté until the vegetables become tender. Add the minced garlic and continue to cook until it releases its aroma, being careful not to let it brown.
  3. Increase the heat slightly and add the cold, cooked rice and frozen peas to the pan. Cook the mixture for about 3-4 minutes, allowing it to sizzle and develop a light golden color.
  4. Add the cooked eggs, sliced green onions, soy sauce, sesame oil, and oyster sauce to the pan. Stir everything together and cook for a few more minutes until the rice is thoroughly heated and all ingredients are well combined.
  5. Season with salt and pepper to taste. Serve immediately and enjoy this flavorful, homemade alternative to restaurant takeout.
