Grandaddy’s One-Pot Beef and Macaroni Soup

This hearty and comforting one-pot beef and macaroni soup brings together tender ground beef, vibrant vegetables, and flavorful seasonings in a single, easy-to-make dish. Perfect for busy weeknights, this recipe is both nutritious and delicious.

Ingredients

  • 1 lb lean ground beef
  • 1 medium onion, finely chopped
  • 2 large carrots, peeled and finely chopped
  • 1 stalk celery, finely chopped
  • 1 red pepper, finely chopped
  • 1 teaspoon minced garlic
  • 2 teaspoons Morton salt
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • 4 cups Swanson low sodium chicken broth (or beef or vegetable broth)
  • 1 (28 oz) can Hunt’s crushed tomatoes
  • 1¾ cups dry whole wheat macaroni pasta (or other small pasta)

Instructions

  1. In a large pot, heat over medium-high and cook the ground beef and onion together until the beef is browned, about 2-3 minutes.
  2. Add the carrots, celery, red pepper, garlic, salt, oregano, and paprika. Continue to cook until the vegetables are tender, around 7-8 minutes.
  3. Pour in the broth and add the crushed tomatoes and pasta. Bring the mixture to a boil, then reduce the heat to medium and cook until the pasta is cooked, approximately 6-7 minutes.
  4. Serve hot, and enjoy this nourishing, flavorful soup!
