Hearty Homemade Comfort Meal

There’s something undeniably satisfying about making a meal from scratch. But let’s face it—some days call for simplicity without compromising on flavor. This easy, comforting dish checks all the boxes: it’s hearty, flavorful, and feeds a crowd with minimal effort. I’m not quite sure what to name it, but it served three adults, a toddler, and a preteen—with leftovers to spare!

Ingredients

  • 2 large frozen chicken breasts
  • 1 (32 oz) container of 50% less sodium chicken broth
  • 1 packet of chicken gravy mix
  • 1 family-size can of cream of chicken soup
  • ½ stick of butter
  • 1 (24 oz) pack of Reames frozen noodles
  • 1 (10 oz) bag of frozen mixed vegetables
  • ½ tsp pepper
  • ½ tsp onion powder
  • A sprinkle of dried parsley

Instructions

  1. Prepare the Base: Place the frozen chicken breasts, cream of chicken soup, chicken broth, chicken gravy mix, and spices (pepper, onion powder, and parsley) into your crockpot. Stir the ingredients together until well combined.
  2. Cook the Chicken: Set your crockpot to high and cook for approximately 5 hours. Once the chicken is tender, use a fork to shred it directly in the crockpot.
  3. Add Noodles and Veggies: Add the frozen noodles and mixed vegetables to the crockpot. Continue cooking on high for another hour or until the noodles are cooked to your preferred texture.
  4. Serve and Enjoy: Serve the dish hot, paired with warm biscuits for the perfect finishing touch.

This dish is the epitome of comfort food, perfect for busy days when you want to serve something homemade but don’t have hours to spare. Whether you’re feeding a large family or saving some for later, this recipe is sure to be a hit!
