Homemade Turtle Candy with Pecans and Caramel
Ingredients:
- 64 Pecan halves
- 11 oz. Baking/cooking caramels
- 1 Bag semi-sweet chocolate chips
- Parchment paper or silicone baking mat
Instructions:
Lay the pecan halves flat-side down on a baking sheet lined with parchment paper or a silicone baking mat. Arrange them into sets of four, forming cross or “X” shapes, ensuring there’s enough space between each group. These will serve as the base of your turtle candies.
Unwrap the caramels and place them in a microwave-safe bowl. Add a tablespoon of water to the bowl to help with the melting process. Microwave in 30-second intervals, stirring in between, until the caramel is fully melted and smooth.
Using a spoon, drizzle a generous amount of the melted caramel over the center of each pecan group on the baking sheet. Ensure each cluster is well-covered.
Place the semi-sweet chocolate chips in another microwave-safe bowl. Microwave in 30-second intervals, stirring until the chocolate is completely melted and smooth.
Spoon the melted chocolate over the caramel layer, covering it entirely.
Place the baking sheet with the assembled candies into the freezer and let them set for at least 30 minutes. Once they’ve hardened, your turtle candies are ready to be enjoyed!
