Husband’s Happiness: Savory Swiss Steak

This dish, fondly dubbed “Husband’s Happiness,” is a staple in our household. The tender beef combined with a rich, flavorful sauce always wins over hearts.

Ingredients

  • 6 medium-sized beef blade steaks
  • 1 medium-sized onion, sliced
  • 8 ounces fresh mushrooms, thinly sliced
  • 3/4 cup chicken broth
  • 1/2 cup cream
  • 1/4 cup dry sherry
  • 1/4 cup all-purpose flour
  • 4 tablespoons oil
  • Salt and pepper, to taste
  • 1 tablespoon fresh thyme, minced
  • 1 1/2 teaspoons mild paprika
  • 2 tablespoons fresh parsley, chopped

Preparation

  1. Brown the Beef: Heat 2 tablespoons of oil in a skillet over medium-high heat. Season the beef steaks with salt and pepper, then sear them on both sides until browned. Transfer the steaks to your slow cooker.
  2. Sauté the Vegetables: In the same skillet, add the remaining oil and sauté the mushrooms and onions until they become tender. Incorporate the minced thyme and paprika, cooking for an additional minute to release their flavors.
  3. Slow Cook: Transfer the mushroom and onion mixture to the slow cooker, spreading it evenly over the steaks. In a bowl, whisk together the chicken broth, dry sherry, and flour until the mixture is smooth. Pour this over the beef and vegetables in the slow cooker.
  4. Cook: Cover and cook on low for 6-8 hours, or on high for 4-5 hours, until the beef is tender and the flavors have melded beautifully.
  5. Finish the Sauce: Once cooked, remove the steaks from the slow cooker. Stir the fresh parsley and cream into the remaining sauce, blending well. Return the steaks to the slow cooker, ensuring they are well-coated in the sauce. Allow them to cook on low for an additional 10 minutes.
  6. Serve: Serve the Swiss steak over a bed of rice, mashed potatoes, or your preferred sides. Enjoy this comforting and delightful meal.
