When these crispy delights emerged from the oven, my husband couldn’t resist devouring six all by himself!

Ingredients

  • 2 large onions, sliced into 1/4-inch discs
  • 1 cup almond flour
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional for a spicy kick)
  • Salt and pepper to taste
  • 2 large eggs, beaten
  • 2 cups shredded mozzarella or cheddar cheese

Preparation

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Separate the onion slices into individual rings.
  3. Mix the almond flour, paprika, garlic powder, cayenne pepper, salt, and pepper in a shallow dish.
  4. Whisk the eggs in another shallow dish until well beaten.
  5. Dip each onion ring into the egg wash, letting the excess drip off, then coat it in the almond flour mixture.
  6. Arrange the coated onion rings on the prepared baking sheet, ensuring they are spaced out.
  7. Sprinkle shredded cheese generously over each ring, keeping the cheese on the onions rather than the baking sheet.
