Irresistible Mini Meatloaf – Ready in Just 15 Minutes of Prep!

Few things can compare to the mouthwatering aroma of this dish as it bakes in the oven.
This mini meatloaf recipe is a guaranteed crowd-pleaser—perfect for busy weeknights,
family dinners, or even meal prepping!

Ingredients:

  • 1 lb ground turkey or beef
  • 1/3 cup breadcrumbs or oatmeal
  • 1/3 cup grated Parmesan cheese
  • 1 large egg
  • 1 (8 oz) can of tomato sauce (or ketchup)
  • 1/2 tsp garlic powder
  • Salt and freshly ground black pepper, to taste
  • A dash of Worcestershire sauce
  • Chopped vegetables (onions, mushrooms, zucchini, or your favorites)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground meat, breadcrumbs or oatmeal, Parmesan, egg, garlic powder, vegetables, salt, pepper, and a dash of Worcestershire sauce.
  3. Add about 1/4 of the tomato sauce or ketchup into the mixture and blend until well combined.
  4. Divide the mixture evenly into a muffin tin, pressing it firmly into each cup.
  5. Spoon the remaining tomato sauce or ketchup over the top of each mini meatloaf.
  6. Bake for 30 to 35 minutes, or until fully cooked through and slightly browned on top.

Tip: These mini meatloaves also freeze well, making them a great make-ahead option!
