Irresistible Mozzarella-Stuffed Biscuit Bombs
I recently prepared this dish for a gathering, and it was an instant hit—every bite disappeared in no time.
Ingredients:
- 2 cups all-purpose flour
 - 1 tablespoon baking powder
 - 1 teaspoon salt
 - ½ teaspoon baking soda
 - ½ cup unsalted butter, chilled and cut into small cubes
 - 1 cup buttermilk
 - 12 small mozzarella cheese pieces
 - ¼ cup melted butter
 - 1 teaspoon garlic powder
 - 1 tablespoon freshly chopped parsley
 
Instructions:
- Preheat & Prep: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
 - Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, and baking soda.
 - Incorporate Butter: Add the chilled, cubed butter to the dry mixture. Using a pastry cutter or your fingers, blend until the mixture resembles coarse crumbs.
 - Form the Dough: Pour in the buttermilk and mix just until the dough comes together.
 - Shape & Stuff: Transfer the dough to a lightly floured surface and gently press it into a rectangle about ½ inch thick. Divide the dough into 12 equal squares. Place a piece of mozzarella in the center of each square, then fold the dough over, sealing the edges to enclose the cheese completely.
 - Bake: Arrange the stuffed dough balls, seam-side down, on the prepared baking sheet. Brush the tops with melted butter and sprinkle with garlic powder. Bake for 15-18 minutes, or until golden brown and the cheese is melted and gooey.
 - Finish & Serve: Once baked, brush the biscuit bombs with the remaining melted butter and garnish with fresh parsley. Serve warm and enjoy the delicious, cheesy goodness!

- Cheese Options: Experiment with different cheeses like cheddar or pepper jack for a unique twist.
 - Flavor Additions: Enhance the flavor by adding crumbled bacon or a spoonful of your favorite jam for a sweet and savory bite. For an extra kick, mix some red pepper flakes with the garlic powder.
 - Buttermilk Substitute: If you don’t have buttermilk on hand, create a quick substitute by mixing milk with a little lemon juice.
