I recently prepared this dish for a gathering, and it was an instant hit—every bite disappeared in no time.

Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • ½ cup unsalted butter, chilled and cut into small cubes
  • 1 cup buttermilk
  • 12 small mozzarella cheese pieces
  • ¼ cup melted butter
  • 1 teaspoon garlic powder
  • 1 tablespoon freshly chopped parsley

Instructions:

  1. Preheat & Prep: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, and baking soda.
  3. Incorporate Butter: Add the chilled, cubed butter to the dry mixture. Using a pastry cutter or your fingers, blend until the mixture resembles coarse crumbs.
  4. Form the Dough: Pour in the buttermilk and mix just until the dough comes together.
  5. Shape & Stuff: Transfer the dough to a lightly floured surface and gently press it into a rectangle about ½ inch thick. Divide the dough into 12 equal squares. Place a piece of mozzarella in the center of each square, then fold the dough over, sealing the edges to enclose the cheese completely.
  6. Bake: Arrange the stuffed dough balls, seam-side down, on the prepared baking sheet. Brush the tops with melted butter and sprinkle with garlic powder. Bake for 15-18 minutes, or until golden brown and the cheese is melted and gooey.
  7. Finish & Serve: Once baked, brush the biscuit bombs with the remaining melted butter and garnish with fresh parsley. Serve warm and enjoy the delicious, cheesy goodness!

  • Cheese Options: Experiment with different cheeses like cheddar or pepper jack for a unique twist.
