Irresistible Philly Cheese Meatloaf

Packed with savory sautéed vegetables and stuffed with gooey provolone cheese, it delivers all the comfort of a traditional meatloaf with the mouthwatering twist of a Philly cheesesteak.
Ingredients
For the Meatloaf:
- 2 lbs ground beef (80/20 blend)
- 1 small onion, finely chopped
- 1 green bell pepper, finely chopped
- 1 cup chopped mushrooms (optional)
- 2 cloves garlic, minced
- 2 eggs
- 1 cup breadcrumbs (or crushed Ritz crackers)
- 1 tablespoon Worcestershire sauce
- 1 tablespoon ketchup
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded provolone cheese
- 2 tablespoons olive oil
For the Topping:
- 4–5 slices provolone cheese
- Fresh parsley (optional, for garnish)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×5-inch loaf pan.
- Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onion, green bell pepper, mushrooms (if using), and garlic. Sauté until softened and fragrant. Remove from heat and allow to cool slightly.
- Make the Meatloaf Mixture: In a large bowl, combine the ground beef, eggs, breadcrumbs, Worcestershire sauce, ketchup, garlic powder, onion powder, oregano, salt, and pepper. Add the sautéed vegetables and mix until just combined.
- Assemble the Meatloaf: Press half of the meat mixture into the bottom of the loaf pan. Sprinkle with shredded provolone cheese, then top with the remaining meat mixture. Press down firmly.
- Bake: Place the meatloaf in the oven and bake for 45–55 minutes, or until the internal temperature reaches 160°F (71°C).
- Add the Cheese Topping: Remove from the oven and top with provolone slices. Return to the oven for 5–7 minutes, or until the cheese is melted and bubbly.
- Rest and Serve: Let the meatloaf rest for 5–10 minutes. Garnish with fresh parsley if desired and serve hot.
