Island Pecan Pie Recipe
Ingredients
- 1 pie crust (homemade or store-bought)
- 1 3/4 cups sugar
- 1 cup pecans, roughly chopped
- 1 cup crushed pineapple, drained
- 1 cup shredded coconut
- 1/2 cup (1 stick) unsalted butter, melted
- 5 eggs, room temperature
- 1 tablespoon cornstarch
- 1 tablespoon all-purpose flour
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 300º F (150º C).
- In a large mixing bowl, beat together the sugar, eggs, cornstarch, flour, and salt until well combined.
- Mix in the melted butter, then gently fold in the chopped pecans, drained pineapple, and shredded coconut.
- Place the pie crust in a round baking dish and pour the pecan mixture over the crust. Crimp the edges of the crust for a decorative finish.
- Put the baking dish in the oven and bake for 55 minutes, or until the pie is almost set.
- Cover the pie with aluminum foil and continue baking for another 15-20 minutes, or until the center is just set.
- Remove the pie from the oven and allow it to cool. Garnish with whipped cream and toasted coconut if desired.
