Jalapeno Popper Egg Rolls
Ingredients:
- 12 egg roll wrappers
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 6 strips of bacon, cooked and crumbled
- 4 large jalapenos, seeded and diced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Olive oil spray
Directions:
- Preheat the Oven: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper and set it aside.
- Prepare the Filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, diced jalapenos, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are well incorporated.
- Assemble the Egg Rolls:
- Lay an egg roll wrapper on a clean surface.
- Place about 2 tablespoons of the filling mixture in the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides, and roll up tightly. Use a dab of water to seal the edges. Repeat with the remaining wrappers and filling.
- Bake the Egg Rolls: Place the egg rolls seam side down on the prepared baking sheet. Lightly spray the tops with olive oil spray. Bake for 15-20 minutes, turning halfway through, until the egg rolls are crispy and golden brown.
- Serve: Remove from the oven and let cool slightly before serving. Enjoy these with your chosen dipping sauce or sides.

- Cheese Variations: For a different flavor profile, consider using smoked cheddar or pepper jack cheese instead of regular cheddar.
- Vegetarian Option: If you prefer a vegetarian version, omit the bacon and add more veggies like finely chopped bell peppers or corn.
