Low Carb 3-Ingredient Smash Burger Patties

Introduction
Craving a juicy, crispy-edged burger without the carbs? These Low Carb 3-Ingredient Smash Burger Patties are incredibly simple, fast, and flavorful. The patties are smashed onto a very hot skillet, creating those irresistible browned, crispy edges while keeping the center juicy. The smash technique works especially well when the beef is loosely formed and cooked on a properly heated surface.
Ingredients
Makes 4 patties
- 1 lb (450 g) 80/20 ground beef
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
Optional for serving: lettuce leaves, sliced pickles, onion, tomato, or cheese. These toppings aren’t counted among the 3 ingredients.
Instructions
- Divide the beef: Divide the ground beef into 4 equal portions and gently shape each into a loose ball. Don’t compact the meat too firmly.
- Heat the skillet: Place a cast-iron skillet or heavy griddle over high heat until very hot.
- Smash: Place a beef ball in the skillet. Immediately cover it with a small piece of parchment paper and press firmly with a sturdy spatula until very thin.
- Season: Sprinkle the exposed side with salt and pepper.
- Cook: Cook for about 2–3 minutes, until the bottom develops a deep brown, crispy crust.
- Flip: Scrape underneath the patty to preserve the crust, then flip. Cook for another 1–2 minutes, until cooked through. Ground beef should reach 160°F/71°C internally.
- Serve: Repeat with the remaining beef and serve immediately with your favorite low-carb toppings.
