Instructions

1. Prepare the Meatloaf:

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic; sauté until softened and fragrant.
  3. In a large mixing bowl, combine the ground beef, breadcrumbs, tomato sauce, egg, BBQ sauce, sautéed onion and garlic, peas, parsley, salt, and pepper. Mix thoroughly.
  4. Transfer the meat mixture to a loaf pan or form it into a loaf shape on a parchment-lined baking sheet.
  5. Bake for 45–50 minutes, or until the internal temperature reaches 160°F (70°C).

2. Make the Mashed Potatoes:

  1. While the meatloaf is baking, place the peeled and chopped potatoes in a large pot. Cover with water and bring to a boil. Cook until the potatoes are fork-tender.
  2. Drain the potatoes and return them to the pot.
  3. Add butter, heavy cream, salt, and pepper. Mash until smooth and creamy. Adjust seasoning to taste.
